Most Dreaded Day Of The Season

That's right people. The most dreaded day of the season has hit me like a Mack truck this morning.... The Cold/Flu day. I will admit... I was warned this day would come by family and friends. Yet, in my stubborness to not take my vitamins - Juice Plus - and get my flu shot of the season, I have been marked by the beast of this enemy. But what can I say, I forget about that little bottle of goodness for my body and refuse to come near a shot after a still traumatic experience involving a shot and my little tush O so many years ago.

So here it is, the scarlett letter of my stubborness - The red nose, the tissues everywhere, and the necessary purell. I was beyond excited when one of my co-workers brought me some amazing Chicken & Wild Rice Soup.

So My perfect recipe and remedy for a "cold" or cold day..... Is right below. That's right.. my future kids are going to be so lucky.

Ingredients
4 skinless boneless chicken breasts
6 boullion cubes - chicken
8 cups water
4 stalks celery, cut-up
4 carrots, cut-up
1 onion, cut-up
4 cloves garlic, mashed
1 bay leaf
3/4 tsp black pepper
1/2 lemon, squeezed into soup

Directions:
Cover and cook in big heavy pot slowly for 2 hours.
Stir and taste once in awhile. It may need more water after 2 hours, dump in 1/2 cup raw rice or two handsful of egg noodles. Cover and cook another 30 min

Additional Remedy:

Happy Cold/"Cold" day and enjoy
